07 Jun Blackened Cajun Chicken Pasta

When Dayton and I started dating, we went on a road trip with a friend to San Francisco. On the way home we stopped to meet who would become my future in-laws. Dayton’s parents were staying in St. George, so we stopped to say hello. Dayton’s dad had made this DELICIOUS pasta dish that I thought was just amazing. It is one of my father-in law’s favorite dishes to make when we come to visit. With a few adjustments, here is the gluten free version.

Blackened Cajun Chicken Pasta

Serves: 4-6 servings
  • ¼ c. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. oregano
  • 1 tbsp. oil
  • 1 garlic clove
  • 2 tsp. onion, minced
  • 1 ¾ c. chicken broth
  • 4 small boneless, skinless chicken breasts
  • 1 medium tomato
  • salt to taste
  • 8 oz. gluten free pasta
  1. To make cajun spice, mix paprika, garlic powder, onion powder, and oregano.
  2. Cut chicken breasts into strips.
  3. Cook chicken strips in a large pan. Remove and set aside.
  4. In a pot, boil water for pasta.
  5. In the same pan you used to cook the chicken, saute garlic and onion in oil.
  6. Add chicken broth, tomatoes, and ¼ tsp. cajun sauce. Simmer for 8 minutes.
  7. While sauce is simmering, add pasta to boiling water and cook until pasta is tender.
  8. Drain pasta and top with chicken and sauce. Enjoy.
