07 Jun Crockpot Fajitas

Fajitas. They are one of my favorite foods. I have really enjoyed Mexican food lately, and these hit the spot. Plus, it’s a crockpot meal. Easy. AND it is a great one to freeze or take to a neighbor as well. Feel free to serve with rice. I personally love adding diced avocados to my fajitas. Looking for a great side? Serves: 8-10 servings
  • 4 cloves garlic
  • 1 yellow onion
  • 3 bell peppers
  • 1 14.5 oz. can tomatoes
  • 1 can green chiles
  • 2 limes
  • 2 tsp. paprika
  • 2 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp salt
  • ½ tsp. pepper
  • 2 lbs. chicken breasts
  • fresh cilantro for serving
  1. Spray crockpot with a nonstick spray and place chicken breasts on bottom of crockpot.
  2. Dice onion and peppers into long strips.
  3. Pour half of tomatoes on chicken.
  4. Sprinkle half of peppers and onions on the tomatoes.
  5. Pour remaining half of tomatoes over peppers and onions and place remaining peppers and onions on top.
  6. Sprinkle seasonings and juice 2 limes.
  7. Cook on high for 3-4 hours.
  8. Serve with cilantro, and corn tortillas.
*Servings will depend on the tortillas. If using large flour tortillas, it will make 9 fajitas. If using corn tortillas, it will make about 18 fajitas. Because it makes so much, I often freeze half of the recipe for another night.
