07 Jun Paleo Almond Flour Waffles
Paleo Almond Flour Waffles may just be my new favorite waffle. They are DIVINE. Seriously. I personally LOVE coconut, so I enjoyed using coconut flour and coconut oil. I love coconut oil and the light coconut taste, but If you don’t love coconut, I wouldn’t use it. You will definitely taste the coconut. I would recommend using another light tasting oil instead. I found this recipe at Nurture My Gut. Waffle irons can be a death trap for cross contamination. The batter slips into every crack and can be almost impossible to completely remove. If you have a serious gluten intolerance/allergy, than I would suggest using only a designated gluten free waffle iron. We have ours labeled at home to avoid any issues.
- 1 c. almond milk
- 1 tbsp. lemon juice
- 1 c. almond flour
- 1 c. tapioca starch
- 2 tbsp. coconut flour
- 2 tsp. baking powder
- ¼ tsp. salt
- 2 eggs
- 3 tbsp. coconut oil
- ½ tsp. vanilla
- Add lemon juice to almond milk and let set for 5 minutes.
- Combine flours, tapioca starch, baking powder, and salt.
- Add vanilla and whisk in eggs.
- Add almond milk and stir to combine.
- Pour batter in waffle maker and cook. Enjoy!
