Paleo Almond Flour Waffles may just be my new favorite waffle. They are DIVINE. Seriously. I personally LOVE coconut, so I enjoyed using coconut flour and coconut oil. I love coconut oil and the light coconut taste, but If you don’t love coconut, I wouldn’t use it. You will definitely taste the coconut. I would recommend using another light tasting oil instead. I found this recipe at Nurture My Gut. Waffle irons can be a death trap for cross contamination. The batter slips into every crack and can be almost impossible to completely remove. If you have a serious gluten intolerance/allergy, than I would suggest using only a designated gluten free waffle iron. We have ours labeled at home to avoid any issues.


Almond Flour Waffles

Serves: 6-8 waffles
  • 1 c. almond milk
  • 1 tbsp. lemon juice
  • 1 c. almond flour
  • 1 c. tapioca starch
  • 2 tbsp. coconut flour
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • 2 eggs
  • 3 tbsp. coconut oil
  • ½ tsp. vanilla
  1. Add lemon juice to almond milk and let set for 5 minutes.
  2. Combine flours, tapioca starch, baking powder, and salt.
  3. Add vanilla and whisk in eggs.
  4. Add almond milk and stir to combine.
  5. Pour batter in waffle maker and cook. Enjoy!
