06 Jul Sweet Potato Chips
If you are looking for a healthy snack, look no further. I have an obsession with sweet potato fries, so when I have a craving, these are my go to. Feel free to spice them up with vinegar or salt or take the sweet route and add some honey and cinnamon. YUM!
- 2 sweet potatoes
- 2 tsp. salt
- 2 tbsp. coconut oil or oil of choice
- Preheat oven to 425.
- Using a mandolin slicer, slice sweet potatoes and place on non-stick baking sheet.
- Cook for 15 minutes or until crisp.
- Stir chips into melted coconut oil and salt.
I prefer using a mandolin to ensure potato slices are uniform and will cook evenly.
