07 Jul Tuna Dip and Cucumber Sandwiches

This is my classic go to lunch. Packed with healthy fats and protein, it will leave you feeling full. This can be eaten as a dip, salad, or as cucumber sandwiches. Sometimes I dip cucumbers or peppers. It could also be eaten with crackers. This can also be stuffed into a tomato for a nice display. Feel free to mix it up for what works for you and your taste buds. Both of my boys love eating this. Their favorite is with cucumbers or crackers.


Tuna Dip and Cucumber Sandwiches

Ingredients
  • 2 cans tuna
  • 1 avocado
  • 2 cucumbers
  • 1 large tomato
Instructions
  1. Mash avocados.
  2. Stir in tuna fish.
  3. Chop tomato and add to tuna.
  4. Peel and slice cucumber.
  5. Dip cucumbers into tuna and enjoy.
Notes
The only soy free tuna I have been able to find is the great value brand. It is made with a soy free vegetable broth. My son has never had issues with it, but use at your own discretion. Sometimes I have seen western family without soy, but this has been very rare.
