Asparagus is one of my favorite vegetables. It can be easy to cook and makes a great side to dinner. Asparagus is packed with nutrients. It is high in fiber, folic acid, and vitamins A, C, E, and K. It reduces bloating and helps flush the body of extra fluids and salt. It also tastes great! So what’s not to love? Try roasting with lemons, salt, and pepper. Enjoy!

Roasted Asparagus

Serves: 4 servings
  • 1 1⁄2 lbs. asparagus
  • 1 lemon
  • salt
  • pepper
  1. Preheat oven to 400.
  2. Wash asparagus and cut off ends.
  3. Place asparagus onto a baking sheet and drizzle with olive oil.
  4. Squeeze 1 fresh lemon over asparagus and sprinkle with salt and pepper.
  5. Cook for 16-18 minutes.
