21 Jul Zucchini Brownies

Wondering what to do with your abundance supply of zucchini this summer? This is a yummy chocolate treat and a great way to disguise zucchini for those veggie haters. My son gobbled these up. They are moist and resemble a “real” brownie texture. This recipe doesn’t have any oil and is refined sugar free. Did I mention they were vegan AND gluten free? Zucchini Brownies

Ingredients
  • ¼ c. applesauce
  • ¼ c. honey or maple syrup
  • ¼ c. stevia
  • ½ c. cocoa powder
  • 1½ tsp. baking soda
  • 2 tsp. vanilla
  • ¼ tsp. salt
  • 2 eggs (I used 2 tbsp. vinegar mixed with 2 tsp. baking soda)
  • 1 c. gluten free flour blend
  • 2 c. shredded zucchini
  • *Optional- 1 c. semi sweet chocolate chips (Enjoy Life brand)
Instructions
  1. Wash, peel and shred zucchini.
  2. Combine applesauce, sweeteners, cocoa powder, vanilla, and salt.
  3. Add vinegar egg replacement. (Eggs if not substituting).
  4. If not substituting eggs, add baking soda. Reduce soda to 1 tsp. if using vinegar egg replacement.
  5. Stir in 1 c. gluten free flour.
  6. Mix in shredded zucchini.
  7. Gently stir in chocolate chips (optional).
  8. Spray 8x8 baking pan.
  9. Pour batter into pan.
  10. Bake at 350 for 30-35 mins.
Notes
If you have a "sweeter" tooth, feel free to add more honey or stevia. I find it plenty sweet, so be sure to taste the batter first. The optional chocolate chips will also enhance the sweetness. Semi sweet or milk chocolate can be used. Use Enjoy Life brand for dairy free substitute.
