20 Aug Vegan Fudgsicles

It has been one hot summer. The boys and I have been experimenting with different popsicles, since there aren’t many at the store that Carter can eat. Plus, it’s always nice to make a healthy version right? Nothing tastes better than a frozen, cold treat on a hot summer day. These fudgiscles are vegan and only take 6 ingredients! They are great for kids or adults. Something you can feel good about eating. They were Hunter’s favorite popsicle that we made this summer. 

Vegan Fudgsicles

Serves: 6-8 popsicles
  • 1 avocado
  • 1½ tbsp. cocoa
  • 1 tbsp. chia seeds
  • 3 tbsp maple syrup or honey
  • 1 can coconut milk
  1. Place all ingredients in a blender and mix until smooth. Freeze mixture into molds. Freeze for at least 4 hours.
