28 Aug Watermelon Lime Popsicles

We’ve been enjoying fresh watermelon from the garden this year. Hunter, my 4 year old, can’t get enough of it. The other day I cut up watermelon and put in the fridge. I came down into the kitchen and found him eating it. . . . he had eaten almost an entire watermelon in one sitting. I will say I’m glad it was watermelon this time and not the frozen cookie dough in the freezer. Because we’ve had so much watermelon, I experimented and made these watermelon lime popsicles. They are a little tart so feel free to decrease the lime, or add more honey/agave if you like. These popsicles are fresh and are the perfect for a hot summer day. Many of you have kids in school. This is such a great after school snack. Try it out!



Watermelon Lime Popsicles

Serves: 2 c. or about 12 popsicles
  • 2 c. watermelon
  • juice of 1 lime
  • juice of ½ lemon
  • 1½ tbsp. honey or agave
  1. Cut watermelon.
  2. Add ingredients into a high powered blender and blend until smooth.
  3. Pour liquid into popsicle molds.
  4. Freeze for at least four hours.
