28 Oct No Bake, Dairy Free, Naturally Sweetened Fudge

I am all about food that doesn’t require any baking. Can’t get any easier than that right? No Bake, Dairy Free, Naturally Sweetened Fudge is fool proof. It requires no baking whatsoever. Simply mix the five, yes that’s right, FIVE ingredients into a bowl, stir, and refrigerate. So, so, simple. This fudge is paleo and great for those with food sensitivities or special food diets.  It is a great, healthy kid friendly treat. 

One recipe should fill 1/2 of an 8 x 8 cooking dish. 

I love these candy googly eyes. How cute are they? I have seen them all over Pinterest and wanted to make them. I got this idea from Self Proclaimed Foodie.

To make the google eyes, I combined 1 egg white with 1 1/3 c. powdered sugar.
It should be thick, but should be a little runny of the spatula.

Then, I put the mixture into an icing pipping bag (or plastic bag works great) and dolloped a small amount on a cookie sheet. I did about 10 dollops and then placed a dairy free mini chocolate chip in the middle. Baking chips would also work. I then let them sit for 24 hours. I tried scraping off with a spatula. . . didn’t go so well. Pinterest fail. Instead, I just placed the eyes on the fudge- straight on- and found that worked better. I didn’t have to wait 24 hours, and I didn’t have to worry about transferring. Much better. I’m sure regular frosting would work for the eye whites as well.

Ingredients
  • ½ c. coconut oil, unrefined
  • ¼ c. cocoa powder- more to taste
  • ¼ c. honey or pure maple syrup
  • ½ c. peanut butter (or preferred nut butter)
  • 1 tsp. vanilla
Instructions
  1. Combine all ingredients into a bowl. Stir to combine.
  2. Pour fudge mixture into a baking dish and refrigerate for 25-30 minutes.
  3. Remove from fridge and cut into small square.
  4. Serve and enjoy!
