Welcome to Healthy Appetites! My name is Brooke. I live in Utah and absolutely love it here. I love the beautiful mountains and enjoy the great outdoors. I enjoy being active. I love to run, ride my road bike, and hike in the mountains. I also enjoy reading and traveling. I married my best friend and together we have two beautiful boys, ages 3 and 1. We are expecting boy number 3 in September. We recently added our adorable puppy, Otie to the mix. My boys are my world, but definitely keep me busy. In between being a mom I enjoy experimenting in the kitchen and creating delicious, healthy foods everyone can enjoy.

My Story

Being healthy has always been apart of my life, but has recently become an even bigger part of my life. In 2010, I started having some serious GI issues. I soon went off all dairy products. This seemed to help, but it definitely didn’t solve my problems. I saw specialist after specialist. I took test after test without any answers. I was sick for a long time and didn’t know what to do. I was frustrated and felt hopeless. My health was impacting my life and nothing seemed to be working. Something HAD to change.

In 2012, I went to a sports dietitian. She changed my life. I kept a very strict food diary and after a few months discovered a gluten problem. I was diagnosed with celiacs disease. I immediately went of gluten (well it took a good few months to really understand gluten ingredients and the pain of cross contamination) but after eating a gluten free, dairy free diet, I felt so much better. I returned to my normal, healthy, happy self. It has now been over 5 years and I still eat a strict gluten free, dairy free diet. As long as I do so, my stomach and I are happy.

Fast forward to summer of 2016. My youngest son Carter stopped breastfeeding and went on an all food diet. He was having MAJOR issues and it about broke my heart to see him suffer and it brought back terrible memories of the years I suffered. I put him on an elimination diet (free of all the top allergies) and slowly introduced foods. Through the process of elimination, we discovered Carter has an intolerance to gluten, dairy, soy, eggs, and peanuts. Quite the list right? Sometimes it has been hard to follow his diet. I have to do a lot more cooking and preparation, but it is worth it. We have seen HUGE improvements. He finally started to gain weight and his gut is healing. I know how hard it can be for families with allergies/food issues and I want to simplify the stress by sharing simple, healthy, and allergy friendly recipes. My recipes can be adapted for any needs (allergies or not).

What You Can Find

On my website you can find recipes that are gluten free, dairy free, and refined sugar free. Most recipes are soy free and many are vegetarian and vegan. I create a variety of recipes that can be made in less than 30 minutes. I also share recipes that are kid friendly. As a mother, I know how hard mealtimes can be and I understand the importance of cooking on a budget. I want to provide healthy recipes your entire family can enjoy, without costing a fortune. Most of my recipes use ingredients already found in your kitchen. For your convenience, my recipes are labeled and easy to navigate.

My “Food” Philosophy

I don’t believe everyone should be gluten free and I don’t believe in diets or calorie counting. I do believe in eating whole foods and I love incorporating more plants into my cooking. I believe we should fuel our bodies with food that makes us feel good mentally and physically. I believe we should eat well balanced, proportionate meals without sacrificing flavor.
